Maximum (realistic) muscle gain

Hey guys,
I'm currently on a cut, and in a short while will begin transitioning to a maintenance then bulk pattern. I'm looking to "lock in" as much of the fat loss as I can when I start transitioning out of the cut pattern of eating. Are there any ideas out there as to how many pounds of muscle someone lifting in accordance with HST principles, taking no exogenous steroids/hormones, and eating the appropriate caloric intake (both in terms of overall calorie total and macronutrient composition), could reasonably expect to gain? A pound a week? Less? More? Any and all insight would be fantastic.

Also, is there a particular composition of carbs, protein, and fats that is most conducive to muscle growth/gains (and in the right amount, clearly)? I know the protein in grams equal to (or slightly above) current body weight, but outside that, I'm not sure.
