I have read where Bryan states that "larger increments lead to greater hypertrophy". With that being the case, what about this....does this look ok to do for just about all exercises?

Bench Press 15's

145-145-160-160-175-175

Not exactly linear I don't guess, but progressive nonetheless.

Looks good.

As long as you are making progression each workout you will be good to go!

Looks fine to me, the only reason why one would make increments less is because of being close to one's maximum.

If you can handle big jumps initially that's fine, just check towards the end, that you slow down so that you don't hinder your progression.
