Before I start I want to make sure I will be doing this right. I am assuming the first 2 weeks will be 2x15 per exercise, next 2 weeks 2x10 per exercise, next 2 weeks 2x5 per exercise and last 2 weeks 2x5 per exercise then SD??
 
From my understanding try for 3 sets for the first two weeks of 15's. for the 2nd mesocycle (10 rep) try for 3 sets but if the weight is too heavy in the second week you can cut a set, same with the 5 rep mesocycle.
 
You are correct when talking about the time and rep ranges. As far as sets go... there isn't a set amount that you have to do. Do as much as you can do without going to failure. It is a workout! Keep in mind that you do not want to overload on sets for the 1st exercise of a given muscle group because you will be weaker for the 2nd exercise.

Example:
If you are doing dips first and bench second, then don't go all out volume for the dips... this is the case where you want to limit the number of sets you are doing.
