different poundages

something is puzzling me.my max for ez curls for 5 reps is 32 kgs and for hammer is 17.5 kgs per db.i alternate exercise and increment 10%.
also for triceps i use 1 arm triceps ext 5 reps max 12.5 kgs db alternated with lying db skull crushes 2 dbs simulteneously max 5 reps 15 kgs per db.
now in my middle cycle i can do 8 reps at 10 kgs per db for hammer and 25 kgs ez curl
and 8 kgs 1 arm db extension and 10 kgs for lying db skull crushes each db.
my question is
am i getting a hypertophic stimulus as my poundage is not the same each time?i mean suppose monday ez curls 25 kgs then wednesday hammer 10 kgs.there is a decrease in weights and hence no hypertrophy.?
can someone explain to me please if am wrong?
