Going to start my first HST cycle but...

I am curious how many sets would be deemed appropriate in a given week. My current program looks like so:

Mon/Fri:
Squat - 1 set
Snatch Grip DL - 2 sets
Incline Bench - 2 sets
Dips - 1 set
Supinated Lat Pulldown - 2 sets
Pendlay Rows - 2 sets
OH Press - 2 sets
Rear Delt - 1 set
DB Curls - 2 sets
Skullcrushers - 2 sets
Seated Calf - 2 sets
Weighted Crunches - 2 sets

Wed:
Front Squat - 2 sets
Romanian DL - 1 set
Incline Bench - 1 set
Dips - 2 sets
WG Lat Pulldown - 2 sets
Pendlay Rows - 2 sets
OH Press - 1 set
Upright Row - 2 sets
DB Hammer Curls - 2 sets
Tricep Pushdown - 2 sets
Sled Calf Press - 2 sets
Leg Raises - 2 sets


So in a given week, it looks like:
Legs - 9 sets
Chest - 9 sets
Back - 12 sets
Shoulders - 9 sets
Biceps - 6 sets
Triceps - 6 sets
Calves - 6 sets
Core - 6 sets

Do you think I should minimize the number of exercises in a week (i.e. 1 exercise for all eight body parts, 2/3 sets) or keep it as is? What would you think would be more practical for a person such as myself with a training status of a solid year, on and off for three.
