Interesting Article on Fats

It seemed to me that most of the countries where the saturated fat was eaten more often and their health was better were all countries where there are less processed foods eaten. It was interesting though. We are finally coming to the realization in this country that we've processed the nutrition out of everything we touch.
Except for the manufacturers.
 
Could that be the offset of having better medicine? Heheh, no, I got it....the preservatives are actually working if we don't get cancer from them!

Yeah I think it has to do with the advanced medical care. Also, despite having processed foods, we simply dont have worry about not having food. Also I think the widespread availability of vitamin/mineral supplements and fortified foods goes a long way to help offset the processed food problem. I am not sure processing itself is a bad thing, it just has to be done in the right way. The processing involved in making extra virgin olive oil does no damage to the product, but when you start hydrogenating vegetable oils using high heat, solvents, and transition metals it becomes a problem.
 
The fresh fruit you purchase is also processed, to maintain its freshness. Like placing them in a nitrogen rich enviroment will maintain freshness for a long period of time. Some of the fruit where I am from is ~6 months old by the time it gets to the market.
