Vegetarian Carb Carving

This is a question for vegetarians or just those knowledgable few... At the end of the season, I will try my first cutting cycle. I am probably going to follow a low GI carb morning into no carb evening diet. My question is, without eating meat, any suggestions about no / low carb evening meals?
 
If this is your first cutting cycle, I'm not sure why you're going low-GI, rather than just cutting cals, but here goes (for starters):

Tofu
Gluten (seitan)
Skim milk
Non-fat cottage cheese
 
I could just scale down calories, but I figure this to be more effective and entertaining.

You know, I have always heard this rumor (with no supporting evidence mind you) taking in too much protein from soy lowered your Test levels. Has anyone studies for or against this?

...Skim milk and cottage cheese have some carbs though. I guess there just isn't an equivalent to eating a whole chicken for us veggies.
