I'm in the process of sorting out an HST routine, which i'll be commencing on return from my holidays.

Quick question - what will be the effect of using 6 rep sets instead of 5 on the last 2/4 weeks of my first cycle?

Is this advisable, or shall I just stick to 5?

Very little effect but I am curious as to why YOU would rather do 6 then 5. I have heard some people say that you can't experience hypertrophy with less than 10, 8, or perhaps 6 reps but that is simply not true. Hypertrophy can be experienced with even 1 rep if you do enough sets to hit a minimum time under tension.
 
No other reason than I progressed faster whilst I was performing a 4x6 routine, than when I was performing a 5x5 routine...
 
No reason why you can't. HST doesn't include a "multiples of 5 principle" after all.
