I read in one of your responses about training that you were doing a low carb diet during the week and then loading carbs in the weekend. I have tried the low carb thing a few times with pretty good results. My problem however, is to keep the calories up while cutting the carbs and to find some variety in the food. I was wondering if you could assist me in a sample diet of yours or advice of how to set up a good low carb diet.

How low carb are you going ? Keto or just above ? There are plenty of books on zone-ish foods that you can make lower in carbs by using vegetables instead of carb sources.

Apart from that...very low carb is very boring, but very rewarding to some people.
 
All natural peanut butter is a good, tasty source of healthy fat. Plus, it has some fiber and protein. Add a couple of servings of fish oil and/or flax oil and you're already half way home.

Italina salad dressing is another easy way to get those calories.
