What to eat while bulking/cutting?

Well a friend and i are about to start our HST cycle. I remembered reading that your diet plays a major part in how big you grow and how fast.

Which brings me to my question;

What types of food and how much of it should i be eating each day during the bulking process? I know that i should be aiming for protein rich foods. All that comes to mind is chicken and fish? heh.

Also does the way it is cooked matter much?

Second question is the same except for cutting.

Steak chicken, milk, fish, eggs, fruits, veggies and nuts
